Broccoli Slaw and Apple Salad

I ate this salad for the first time a few weeks ago at my girlfriend’s graduation dinner with her roommates. It was a potluck deal, and her mom brought this, in addition to many other culinary delights. While the ingredients are pretty simple, the end product is surprisingly better than the sum of its parts. It has a light, fresh, sweet flavor. I highly recommend trying this when you have a chance.
For this recipe, you’ll need a 12 oz package of broccoli slaw, a half cup of apple cider vinegar, a quarter cup of sugar, a half teaspoon salt, a half teaspoon mustard seed, three tablespoons vegetable oil, three Gala apples, one cup of Craisins, and one or two broccoli heads.

Begin by combining the apple cider vinegar, sugar, salt and mustard seeds in a small saucepan. Bring it to a boil and let it go for about a minute. The sugar should dissolve. Then, let it cool before whisking in the vegetable oil.


While your dressing is heating and cooling, busy yourself by chopping and combining the rest of the ingredients in a large bowl.

The apples and broccoli should be chopped into fairly small pieces. Here is a great guide on how to chop broccoli into florets. I discarded the thick portion of the stem.





Once your vegetables and fruits are combined, pour the dressing over the salad, mix, and serve.


Preferences and Tips
- This recipe tastes much better than it sounds.
- The original recipe calls for two apples, but they are delicious, so I used three.
- I kind of want to try the dressing without the mustard seeds, not because they are bad, but just to see what effect they have on the flavor.

Equipment:
- Knife
- Cutting board
- Large bowl
- Small saucepan
- Measuring cups
Ingredients:
- 1/2 cup apple cider vinegar
- 1/4 cup sugar
- 1/2 tsp. salt
- 1/2 tsp. mustard seed
- 3 tbsp. vegetable oil
- 12 oz package of broccoli slaw mix
- 3 Gala apples, chopped
- 1 cup Craisins
- 1-2 broccoli heads, chopped
Recipe:
- Combine the apple cider vinegar, sugar, salt and mustard seed in a small saucepan and turn on the heat. Allow it to boil until the sugar dissolves, then let it cool. When it is cool, whisk in the vegetable oil.
- While the dressing is heating and cooling, chop the apples finely and broccoli into small florets. Combine the apples, broccoli, broccoli slaw mix and Craisins in a large bowl.
- Pour the dressing over the salad, mix, and serve.

My mom used to make this with carrots instead of the slaw and it had a sweet white dressing. She passed away two years ago and the recipe has been lost. I’m excited about trying this version. Thanks for sharing!
